The 4th Alpine Cuisine Festival will take place on Monday, 2 October 2023. The programme is something not to be missed:

    Reception at the Alpine Cuisine Market
    Arrive & get to know each other: Discover the diverse products of gourmet artisans from the Alpine region at the market square - including presentation of the new SalzburgerLand Via Culinaria Guide.

    Welcome & opening of the Alpine Cuisine Festival

  • 10.45 am-11.30 am
    Opening keynote: "The taste of the Alps"
    Alpine cuisine has been on the rise for several years. However, in order to maintain the height it has reached, it must not stop. On the one hand, it is important to drive further innovations based on tradition, but on the other hand, it is also about discovering new things and, in particular, dealing with the new exotic ones. The culinary pioneer Dominik Flammer and top chef James Baron talk about the opportunities that new vegetables, herbs and fruits provide and show how such new regional products can be perfectly integrated into Alpine cuisine.

    “Communication outside the box”
    With his fresh and inspiring stage appearance, Jakob Lipp, keynote speaker and encourager, will explain together with patron Andreas Döllerer how the Alpine and culinary treasures are ideally communicated so that the message reaches the guest, services and ingredients are valued and guests become regulars .

    Alpine Lunch
    Under the patronage of top chef Andreas Döllerer (JRE) from the gourmet restaurant Döllerer in Golling, you will be surprised by representatives of Alpine cuisine such as Clara Aue from the Bio-Hotel Gralhof am Weissensee, Theresia Palmetzhofer from the Gasthaus Zur Palme in Neuhofen/Ybbs, 4-toque chef Vitus Winkler (JRE) from Sonnhof in St. Veit im Pongau and pastry chef Lukas Schmiderer from Feinkost Schmiderer (formerly Feinkost Lumpi) in Zell am See with their creative dishes. A special thank you also goes to the students from the Bramberg and Bad Hofgastein tourism schools (culinary master class), who use their talents to serve and support the top chefs at the Alpine Cuisine Festival.

    Keynote with Hanni Rützler including discussion group “Wild Women West”
    Food trend researcher Hanni Rützler takes a look into the future and will discuss traditions, innovations and trends in and outside of the kitchen with well-known chefs Eveline Wild (JRE), Milena Broger and Magdalena Schwarz.

  • 3.15 pm-4 pm
    “Alpine Signatures by Norbert Niederkofler”
    The international top chef Norbert Niederkofler from South Tyrol takes visitors on his culinary journey and presents a signature dish from “his” Alpine cuisine with his “Cook the Mountain” philosophy at the live cooking show.

    "The 5th season: wine tasting & networking”
    Farmers‘ autumn meets Vintners‘ autumn: A guided wine sampling session with Weinland Niederösterreich complements the culinary discovery tour through Alpine cuisine at the market.
